Barreled Aged Gin

Our barrel aged gin is a variation of our H.O.B.S. modern craft gin. We took the same recipe and process that we use for H.O.B.S., distilled it to barrel proof, then barrel aged it in local sauvignon blanc barrels to punch up the citrus floral aromas from the wine. It was proofed to “navy strength” 114 proof before bottling.

INGREDIENTS:

Distilled non-GMO corn, 4x filtered water, juniper, lemon peel, coriander, lavender, hibiscus, bay leaf, angelica root, cardamom

PROCESS:

Botanical maceration, distillation, barrel aged, proofed and filtered

Tasting Notes:

Appearance: Golden color, high clarity

Aroma: Citrus, lavender, pine (juniper), tropical and floral attributes from the sauvignon blanc influence

Taste: Pepper spice, citrus, floral, alcohol forward

Finish: Long lingering, juniper-centric finish with floral and citrus accents
