California Straight Bourbon
Young & Yonder California Straight Bourbon- This four grain, triple malt bourbon is made with non-GMO corn and a combination of malted rye, malted barley, and malted wheat. All of our malt is no-till and sustainably grown in California. It is floor malted locally and freshly kilned by hand. This traditional malting technique creates richer more aromatic flavors. Our bourbon is aged in 53-gallon new charred American oak barrels for over 30 months and is non-chill filtered. Each barrel is slowly proofed to 93 with our 4x filtered water. The result is a well-balanced, easy to drink west coast bourbon.
INGREDIENTS:
All California non-GMO verified grains: yellow corn, malted rye, malted wheat, malted barley.
PROCESS:
Four-grain mash, 7 day fermentation, grain on, 4 plate pot distilled, aged 3 years in new charred American Oak barrels
Tasting Notes:
Appearance: Rich amber
Aroma: Maple, vanilla, fresh apples
Taste: Toasted oats, graham cracker, maple syrup
Finish: Warm honey, mild cinnamon
Single Malt Rye Whiskey
Young & Yonder Spirits Single Malt Rye is made from 100% California grown floor malted rye, aged over three years in our freshly emptied bourbon barrels. The once used barrels make this a more grain forward whiskey while still giving it a mild oak and vanilla profile. Proofed to 97 with 4x filtered water and non-chill filtered.

Appearance: Honey straw

Finish: Vanilla cream, baking spices
straight Corn Whiskey
Young and Yonder Straight Corn whiskey was inspired by a corn cookie we tried many years ago. Made with California corn and aged over 3 years in our once used bourbon barrels, this unique whiskey carries sweet and savory notes, making it extra delicious. Proofed to 99 with 4x filtered water and non-chill filtered.

81 % Corn, 9.5 Malted Barley, 9.5 un-malted barley. Grain-on fermentation, twice pot distilled, aged in first fill ex-bourbon barrels

Taste: sweetcorn honey, vanilla wafer
